No need to worry about cooking the chicken from scratch or marinating it. Moreover, rotisserie chicken tends to be tender and juicy, making it an ideal choice for quesadillas. We used Costco’s as they had it on sale for $5 each!

Ingredients for Chicken Quesadilla
Let’s gather the ingredients needed for this delightful Chicken Quesadilla:
- Shredded rotisserie chicken
- Shredded Mexican cheese blend
- Diced bell peppers (use a mix of colors for added vibrancy)
- Sliced onions (whatever kind you like)
- Chopped fresh cilantro
- Grab your favorite seasonings ( I used the 3 items below)
- Large flour tortillas
- Cooking spray or melted butter
- Optional toppings: salsa, sour cream, guacamole, banana peppers
Step by Step
Prepare the Chicken: Start by shredding the rotisserie chicken into bite-sized pieces. If the chicken is cold, you can warm it slightly in the microwave for a few seconds to enhance the flavor.
Prep the Vegetables and Cheese: Slice the bell peppers and red onions, and chop the fresh cilantro. Combine the shredded Mexican cheese blend with the ground cumin, chili powder, and garlic powder in a bowl. Toss the mixture to evenly distribute the spices.
Assemble the Quesadilla: Lay a large flour tortilla flat on a clean surface. Sprinkle the seasoned cheese blend over the tortilla. Add a layer of shredded rotisserie chicken on half of the cheese. Next, scatter a quarter of the diced bell peppers, red onions, and chopped cilantro over the chicken.

Fold and Cook on the Blackstone: Carefully fold the tortilla in half, creating a half-moon shape with the filling enclosed inside. Lightly spray the Blackstone griddle with cooking spray or brush with melted butter. Place the folded quesadilla on the griddle, over medium heat.
Flip and Cook Until Golden: After a couple of minutes, check the underside of the quesadilla to ensure it’s golden brown and lightly crispy. Once achieved, carefully flip the quesadilla to the other side, using a spatula or your hands (be cautious to avoid burns). Cook until the second side is also golden brown and the cheese is melted.
Repeat for Remaining Quesadillas: Repeat the process to make the remaining quesadillas. You can cook multiple quesadillas simultaneously on the Blackstone if it’s large enough.
Serve and Garnish: Once all quesadillas are cooked, transfer them to a cutting board and let them rest for a minute before slicing. Cut each quesadilla into wedges and serve hot. You can also top them with salsa, sour cream, guacamole, or any other favorite toppings for added flavor.
